– 3 lbs red onion ($1/lb @ Venice FM)
– 2 cups apple cider vinegar
– ½ cup water
– ¾ cup sugar
– 1 tbsp kosher salt
– 2 tsp mustard seed
– 1 tsp celery seed
– ½ tsp red chili flakes
SLICING. I really need to invest in a mandolin.
FLAVORS. Sweet, sour, tart, oniony perfection.
These were great mixed into a pork and arugula salad, but I can’t wait for a nice juicy hot dog or burger.
